Tiramisu All Caffe

Serves: 6 - 10

  • 250g cream
  • 250g mascarpone
  • 150g caster sugar
  • 2 cups strong coffee
  • 100ml coffee, diluted with water
  • 30 ladyfinger biscuits
  • bitter cocoa to dust

1. Whip the cream with an electric mixer.
2. In another bowl, whip the mascarpone with the sugar. Fold the whipped cream  and 2 cups of strong coffee through the mascarpone mixture, working it in until smooth and creamy.
3. Pour the diluted coffee into a rectangular dish (decide if  you are going to make a large tiramisu,
or individual ones—then follow these instructions creating your desired size  and configuration).
4. For the first layer, one at a time dip ½ the ladyfinger biscuits into the coffee mixture, and lay on your serving plate.
5. Transfer the cream into a piping bag, and pipe the cream over the biscuits. Proceed with the second and final layer of ladyfinger biscuits into the coffee mixture, and lay on the cream. Pipe the remaining cream over the biscuits, and dust with cocoa to finish. Refrigerate for at least 2 hours before serving.
